I recently goofed up a few CVD encodes (I'm not tellin' how many!) by carelessly cropping and letterboxing, accidentaly changing the field order. I have been reading that ReStream will change the field-order flag so that I won't have to recode, but will it play correctly on a set-top DVD player? Or will I have to recrop correctly and recode? Or is there another way (using my best Dr. Strangelove impression)...?

Restream will change the field order flag properly. If this is the only mistake, then restream is the fastest way to correct it. Why don't you try it on one of the files.
The only issue is that Restream must be used with an elementary video stream, not a multiplexed video-audio file.The more I learn, the more I come to realize how little it is I know.
