What I want to rip is a anime and I want the japanese dialouge, and english subtitles. How would I go around doing this? Anyone have a step by step guide?

Frankly Roshumba, you are asking too much here, IMHO.
My humble advice would be to start reading the numerous guides you will find here, and once you have a good overviex of the process, then ask more precise questions.
You cannot just ask "what do I do now".
Believe me, you won't regret it if you take the time for reading the guides, they are extremely well written and people who spent a lot of time writing them really deserve a big thank !

Checkout both of these links. The flexion site has all the basic info, and the DBB site as anime specfic info and good background (but lots of unnecssary steps).
If you are a complete newbie you might want to try DVD2SVCD, DVDx, or flask. Also for anime, I've found it best to use DVD2AVI's forcefilm on no matter for hybrid DVDs.
