Honestly, my DVD player is 480i, and my TV is analog, so do I need to deinterlace before burning to DVD? My current project is Star Wars OT to DVD, and I am wondering about this.

Yes, but considering DVD players automatically create the interlaced signal toplay on a standard TV since it is not progressive, would it matter?
