i was just wondering how much room the bit rate calculator leaves on the DVD. does it leave enough room if I want to have like 6 pages of menus for scene selection or maybe even motion menus? or should i lower it a little bit to make sure i have enough space?

There's a bitrate calculator somewhere on this site. IIRC, there's an option you can select for extra space for extra stuff. If you just punch in the time it calculates to use the entire disc, sans the allocated space for system files, usually 25-50 MB..
