What are the frame rates of the clips you are trying to convert?
I dont know where "essex" is, so are you in PAL or NTSC land? I'm assuming PAL, seeing as you're trying both frame rates.
Stuttering video is usually a field order problem. Try adjusting that with a sample clip of your source before you go playing around with the frame rates.

  3. the frame rates are 23 fps and 29 and it is pal, this is really driving me crazy when ive burnt a dvd it skips from frame to frame and isnt fluid (if that makes sense) and then slowly gets worse.

You should also try not to do frame rate conversion. 23.976 is pretty simple to get to 25 fps, but 29 is not. Most PAL equipment plays NTSC material fine, so you should try NTSC DVD.

The media, or blank DVD-R you are using, may be of not very good quality. The symptoms you described are in many cases due to not very good media.
