Im using DVD shrink and apperently it compresses the DVD from 9 GB so THE ENTIRE THING can fit on 1 DVDr. IF this is possible why do people sometimes Rip DVDs and dont include special features and certain audio tracks etc?

The more you need compress the video to make it fit, the worse the visual quality gets, so you want to devote as much disc space as possible to the main movie.
If you have a lot of audio and special features taking up space on the DVD then the movie will have to be compressed drastically and then you start to get blocking appearing in motion scenes and the video starts to look fuzzy.
Also be aware that the audio doesn't get compressed so if say a DTS audio track is using 500mb on the 9gb disk it will still require 500mb on the 4.7gb disk - a big chunk that the movie can't use.
So as you remove the unwanted audios and features the compression ratio of the main movie is improving and you get a better final result.
Another trick if you want to keep the extras, is to apply a greater compression ratio to the extra features so that the main movie needs less compression. -

How DO I do this? Im using DVD shrink. I only saw an option that will compress movie to fit on 1 disc?
Also.. Im just about done ripping Enemy At the Gates with 100% and ill see how it views... Then Ill do one with subtitles and useless stuff removed and see how that one turns out.
Oh and 1 more thing. How can I tell If the movie needs no-more compression? Like suppose the full movie was 3.5GB and my aduiod was 500mb. WEll technically I still have around 400MB left with no compressing so does that mean I could throw in 400mb of extra features and leave everything else out and It wont need to compress anything -

Just a Note: Most commercially created DVD movies are created with very high bit rates so generally you can apply a significant compression rate before you notice any visual degradation.
On your disk problem - can't help, but I would suggest you try it again with the later version of DVDShrink. -
ahh thanks for clearing that up.. I got dvd shrink going here now at lattest version and ripped Full backup of enemy at the gates... Same problem. Not a bad disc cause im using dameon tools to mount the image on a virtual drive. SO I wonder whats causing this?
