what size is ideal for a dvd-r when reencoding? I've hear that there can sometimes be problems for some disc past the 4 gb mark.

Quality media is 4,700,000 bytes. That's 4.3 GB.To Be, Or, Not To Be, That, Is The Gazorgan Plan -
I find that the optimum DVD-R size is 4,705,XXX,XXX bytes. Anymore than this causes me to get nervous about pushing the envelope!

RitekG04 DVD-R mine are always around 4.6 GB my largest burn was 4,698,546,342 bytes...I was nervous but it burned and plays fine. Since I use IC7 I have to calculate compressed size myself so this is where I aim.
