I know this has probably been discussed on this forum before, but I'm terrible at coming up with the right terms to search for to find this info I need. So I'm going to go ahead and ask away.
At first I thought about making vob files with multple tracks to go along with the video, but just to make it easy I'm thinking maybe I should just have one audio track and save room. But my problem is which track should I use? If I have 2 AC3 files at 2 channel and 6 channel and a DTS file obviously with 6 channels. Which should I use? Can all DVD players support DTS formats or is that a reciever or TV decoding issue? Basically I'm asking which audio track is best to use so that I can maximize my sound experience, but still retain compatability with all or most home entertainment equipment?

Use the 5.1 AC3 soundtrack if you want max compatibility. DTS is by far the best sounding format but the file sizes are quite large and many DVD players will not be able to play DTS. AC3 2 channel is useless unless the original source is only 2 channel and 5.1 sound is not needed. Every DVD player I have seen will downmix the 5.1 DD sound into 2 channels and output it on the analog outputs.
Dolby Digital is everywhere, for better or worse.
