Does anyone know whether it is better to have hyper-threading enabled or disabled when doing real-time MPEG captures in MMC 8.1 or 8.5?

Definitely enabled. It will be less sensitive to dropped frames (similar to a dual-cpu setup).

Not to mention that CPU usage almost doubles without it. At least it did in my case, and I'm using a 2.4GHz P4 w/800MHz FSB on a Springdale chipset board. It was still tolerably low, but I wouldn't want to engage Videosoap.
If you're talking HT, though, this may not be a very big concern to you.
Unfortunately, I'll be having to disable HT myself, because the MyHD HDTV card I'm getting doesn't like HT. Hopefully it won't be too much of a strain on the system. -
Try it both ways. I'm gonna probably say as long as MMC doesn't have a fit with HT, it'll still be fast enough either way.
