On the guides on this website, it explains that with Instant Copy you can shirnk everything from a DVD-9 and put it on a DVD-5. If I just wanted the movie, could I use IfoEdit to remove the "junk", get my new *.ifo files and then use instant copy to shrink it down to size? Or would I be better off just using DVD2One?

If you are going to do that I recommend DVDToolbox. It allows you to slect what audio you want and subtitles...in an easy to use gui. It then creates all the ifo's etc that you need to input into instantcopy.
I have used this tool it works great. If after stripping what you want, the tool will let you know the size so maybe all you have to do is burn.

I actually did that a couple of times when I only wanted the video. Works great and the only thing you have to remember is that if you plan to keep any subtitles to copy the original IFO subtitle colors and then paste onto new IFO created by IfoEdit. It worked like a charm for me but it was a bit tedious so I think the next time I'm going to use the 'patch' that people are talking about.
Let me know if you have any issues doing this as I made several backups this way and works great! -

If you use DVDtoolbox there is no need to copy subtitle colors or anything.
