number of passes and whether your audio is stereo or stereo are irrelevant as far as calculating the bitrate to use. The only thing that matters for bitrate calculations are bitrates--audio + video
Try using FitCD. it's a good one--easy to use too, and it will even generate your avisynth script if you need to use one.
what are you askin' me for...

  3. Actually, the number of passes does matter, as single pass VBR will almost never be accurate.

yeah...but if you do a VBR encode at 2000k, your file size will be the same whether it took you 1 pass to do it or 10
your filesize ends up being avg bitrate*length every time

Almost, although you have to consider video bitrate and audio bitrate. And there is an overhead when the two are multiplexed, which varies between programs.

  10. I like the vcd help calculator. Simple to use. However, what do you use as the minimum bitrate? I'm sure it's the same for all since they don't include it, but what value should that be?

You can just leave the minimum bitrate at 0 unless your DVD player has a hard time playing low bitrate scenes. If it does, set the minimum bitrate to 500.

    Hope That Helps!!! :P
