well first dont convert it to mp3 if you want the best sound .. convert it to wav ..... i.e. rip audio as a stream (ac3) -> convert to wav (besweet) -> burn wav to audio cd (nero)

    Get DVD Decrypter, first.

Next, load the DVD into your DVD drive, and when it loads it up, go to IFO mode, then go to stream processing.

Uncheck everything except the proper audio stream you want. Toward the bottom of the screen, choose Demux.

Now, on the first tab, set where you want to copy the AC3 file to.

Now, click the big DVD > (HD) icon, and wait a while.

Now, you need to convert the AC3 file to WAV (you want to maintain quality, right?), using a program such as Azid GUI or Headac3he (www.doom9.org for both).

If you want to create seperate tracks for each song, you need some sort of audio editor. I use Soundforge, but that's expensive, so you'll have to find something cheap, around free.

Then you need to downsample it, since the AC3 file is 48khz, and Audio CD is 44.1khz. Soundforge does that, but so do a bunch of other programs. Azid might, and headac3he does.

Then you just burn an Audio CD from the WAV files.

If you want to keep the audio on your PC, convert it to MP3. Any MP3 encoder will do. headac3he will encode WAV -> MP3.

Personally, I would choose a 112kbps VBR OGG file over a 128kbps MP3 any day. If it is classical music, you have to use higher bit rates. 192kbps minimum.
