  1. Ok, So I just started backing up my dvd and blu ray collection to mkv files using https://www.videohelp.com/tools/MakeMKV My question is what should I use for converting the mkv files into H.264 mp4 videos?
    Is mkvtomp4 any good? What about ffmpeg? How would I go about changing the level to level 3.1 and change the audio channels to 2(stereo)?

    I'm a noob and I know this has probably been asked dozens of times, but can you help me out here?

    You can try vidcoder or handbrake.

    And I change your thread title so it actually mentions what you want.

    Thanks those programs work great. One more question though, how do I know if the source is VFR or not, and when should I use VFR over a constant framerate?

    Going with Baldrick on those assuming your trying to also compress the movie, mkv2mp4 is meant for MKV's that are already compressed and you just want to change the container. Yes it does have basic video encoding but that is not it's main purpose as it lacks cropping, deinterlacing, denoising, etc. When you get advanced and don't mind learning some scripting MEGUI is the tool I use day in day out.
