Most DVDs come with both two-channel (2.0) and six-channel (5.1) Dolby Digital soundtracks.
Question lies as to whether one should choose to rip the 5.1 one and transcode to Dolby Surround (using DVD2AVI or DVD2SVCD or whatever) or instead choose the 2.0 one which is (most of the times) Dolby Surround mixed already by the studio.
What are the DVD-ripping pros' opinnions on that? Which way is the surround information more apparent?

dd 2.0 is dolby pro-logic 4 channel in a l+r stereo delivery medium. when you downmix dd 5.1 you are essentially trying to approximate dolby pro-logic 4 channel on non-professional equipment. aside from qualitative issues, why add the extra step?
