DVD to AVI tutorial?

I have one dvd I would like to convert to high quality AVI files. Ive already already extracted the VOB's for the episodes now what should I do with them? How or what programs can I use to reencode them into AVI without much quality loss.

Does anyone have a link to a good tutorial or suggestions/advice of their own?

I would prefer a longer and multiple program use for doing this so I get more customization and quality, instead of a one click do it all for you program.

Freeware can be things like super or xvid4psp. There are plenty of other programs as well.

Thanks for the suggestion, Im sure I could get a good one if I wanted to buy it lol. Im kinda looking for freeware. I would prefer a longer and multiple program use for doing this so I get more customization and quality, instead of a one click do it all for you program anyways.
