I use RibBot264 to rip blu-ray to mkv files, this works fine, nut I would like to have several audio formats and several subtitles in my mkv file. But as I can see there can only be one audio language and one subtitle. Am I wrong or can this be achieved in some other way?

You can extract subs and audio tracks from the blu-ray m2ts file using tsmuxer and add to the mkv using mkvtoolnix.
