How does one record both right and left hand side being that there is only one connection for audio on my camcorder and the other is for video. The Easycap grabber has plugs for both right and left side audio. When I playback the recording of course the only side that one can hear is the right hand side. How can I get both sides of audio?

Are you sure that isn't a stereo mini jack on the camcorder? What model is your camcorder? If not, you need a 'Y' adapter that combines both jacks on the Easycap into a single mono channel and has a mono plug on the other end.
Looks something like this:
That one is a 3.5mm (1/8") stereo mini plug to a R L stereo RCA jack, but there are lots other configurations available. Check the mini plug end of the adapter I posted, that's a stereo type. The mono type would just have the end and the body of the plug to make connection. What type connection does the Easycap have?
You should be able to find those adapters at major retailers or a Radio Shack if one is handy. -
It's a Sony Video 8 Handycam. Both are RCA plugs. One for video the other for audio. No stereo mini jack on the camcorder only a RFU DC out between the two RCA audio and video plugs. The Easycap has the Y plug for both right and left audio along with the video as well. So I'm trying to figure out how one can connect one RCA audio x plug into 2 RCA Y plugs for a right and left audio.

You can get a 'Y' connector for RCA connection also. It would have a single RCA male plug on one end and two RCA male plugs on the other. If you already have a tape transferred, you could also extract out the audio and use a audio editor like Audacity to copy and paste the one channel to a second. Even change the filtering slightly to make it sound more like stereo. Then add it back to the video.
This may be the proper adapter, though you might want it a bit longer, or use one with a female RCA on one end and just add your own extension.
