Hi. I was thinking of getting an Exilim camera from Casio. I have a digital camcorder, but if I use the Exilim for video, it only records to .MOV. Will this be an issue in converting to AVI and doing any video editing? I'm kind of new to all this but just thinking ahead =P. Thanks!

Any highly compressed video format is a pain to edit. Xvid, for example, has a keyframe every 300 frames by default. This makes frame accurate editing all but impossible without re-encoding. The newest Virtualdub can cut at any frame and just re-encode at the cut, making it a bit easier.

I believe those series of cameras use several different formats. Some are MJPEG and others are 'DPOF compliant
Movies - MOV format, H.264/AVC, IMA-ADPCM (monaural)', whatever that means. It's not quite clear to me if it has MOV capability and H.264/AVC capability or it's some combination of both. You should be able to edit it, though. Either VirtualDub or other editors should work with the proper codecs installed. But I wouldn't expect much more than 'YouTube' quality video.
