Unplug for Firefox for both platforms, Orbit (freeware for Windows), SnagIt and Snapz Pro (payware for Windows). On a Mac, iShowU (payware) and Snapz ProX (payware) for files that are streamed and hidden or have "no cache" properties that can't be changed by right-clicking the video window in the browser.

The paywares listed above will capture anything you see, even Real streaming media, but you have to have lots of hd space. Figure about 100mb / minute for full motion capture.

For Safari, you can also use the Activity window to try grabbing YouTube (and other video streams) videos. This page might help, particularly #3: http://www.macosxtips.co.uk/index_files/tricks-for-activity-downloads-windows-safari.html

Don't know if this'll work for you, but it might be worth trying this online convert/download site:
    http://vixy.net/
Its main problem in my hands is that it keeps stopping with an error message, but I find if I keep trying, it gets me there in the end. I use it to watch YouTube stuff because I don't trust Adobe Flash, which has to be installed to watch stuff directly on YouTube.

Unplug is an addon for Firefox. https://addons.mozilla.org/en-US/firefox/addon/2254

It scans web pages for downloadable media. If you use Firefox as a browser, you can install it as an add-on. http://keepvid.com/ and http://www.videodl.org/ are sites that checks the page for you, so it doesn't matter which browser you use.

Fast Video Download https://addons.mozilla.org/en-US/firefox/addon/3590 also works with Firefox.
