I converted a mkv to dvd using ConvertXtoDVD and it is only playable in my dvd player. It will not play in MPC, WMP, or a PS2.

If it is playable in your DVD player then it would indicate that a) it burned successfully, and b) it is DVD compliant.
PS2s are notoriously picky about what they will play when it comes to burned discs.
At a wild guess, I would say that it has burned successfully, but that the discs you have used are not reading back very well.
First thing I would do is put the disc back into your PC and open it in Windows Explorer. If you can see the Video_TS folder, copy this to your HDD and try playing the DVD from there with MPC. If it works, burn a new disc with Imgburn and test that.Read my blog here.

What's not working - it won't play from the HDD or it didn't copy correctly ?
Can you open the files in DVD Shrink ?Read my blog here.
