What are you going to capture? What are you going to make? DVD?

I want to record gameplay footage on my xbox 360 console, then slap it on my PC to edit.

Actually what about this one?

The Plextor and the Dazzle products are both NOT highly regarded.
If I were you I would get the Hauppauge WinTV PVR USB2 which is an external USB 2.0 capture device that captures to MPEG-2 format. BEST BUY and CIRCUIT CITY both carry this device. You can also find it on-line and use a service such as pricegrabber.com to find the best price.
Please note that the Hauppauge will have some lag so you need to split the output of your game system and send one to a TV for playing and one to the capture device for recording. Radio Shack makes such units. For instance here is one that would work and is relatively cheap: CLICK HERE
So you output via the game system using S-Video and analog RCA audio ... plug that into the Radio Shack unit ... then one output of the Radio Shack unit goes to the TV and another goes to the capture device.
Of course you will have to output 480i format.
