What project settings should I use for the capture? Same as with MiniDV NTSC,i.e.,DV NTSC Standard 48KHz? The generated captured file will be 13Gb/hour as in MiniDV SD capture? Thanks.

BINGO.
The DVD format uses 16-bit 48k audio and as you guessed the file size will be as you say because after all the Canopus converts to DV AVI format.
Please note that the Canopus ADVC-100 has switches for 7.5 IRE BLACK and 0.0 IRE BLACK. You should use the 7.5 IRE BLACK setting for all NTSC except for Japanese NTSC which is 0.0 IRE BLACK. All other videos (such as PAL format) should be 0.0 IRE BLACK.
