I currently have a DVD that's in (2 channel) mono...I was able to tweak it around in adobe audition and make a fairly decent false stereo product out of it. now, I know i can use the new version and remux the original DVD video with it and then use VobBlanker to replace it. However, is it possible to keep the original audio stream AND the new "stereo" one along with the video in VobBlanker? I don't have the menu for this specific DVD project anymore and i'm hoping not to have to rebuild it...

You'll have to demux using PGCDemux, and then reauthor, adding in the new stream (I prefer Muxman for that job). Then you can Replace the old DVD with 1 audio track with the new one with 2 tracks using VobBlanker. You'll probably have to turn on that new stream when done, using PGCEdit.
