My only question here is if there is a faster way to get my Mini-DV to my harddrive faster or is 'real-time' my only option? I have no problems making a dvd but it would be nice if there is a way to get an hours worth of video on here sooner. And by the way, I use a Samsung Mini-DV Camcorder and I have a firewire add-on card. Thank you in advance!

If at first you don't succeed; call it version 1.0

No, realtime is it unless they come up with a new way to transfer. You are limited by the speed of your tape. I'm sure they are working on a solid state memory solution, but the price would be pretty high. Someday, though.
