    It's kind of funny in that I don't really shop for cheese, but I do enjoy it. I kind of like some of the stronger tasting ones like smoked gouda or extra sharp chedder. Add some smoked fish or sausage and beer and you got a heart attack on a cracker.
    IS IT SUPPOSED TO SMOKE LIKE THAT?

    I'm from Wisconsin so I have an affinity for cheese

    My favorites are various types of bleu, most notable Stilton or this Danish-type one that is done locally. I also like really sharp cheddars on occasion, or cheese curds right from the dairy. Sandwich cheese is the Lorraine Swiss.

    I like pretty much every sort of cheese though I'm still not much into the pungent ones like brick cheese. My mom loves the stuff but it's still a little bit too strong for me.

    Well, I don't know that much about how different cheeses are "supposed" to taste ... only that I like the taste of what they call "pepperjack." I ask for it every time I visit.

    Parmesan is great cheese, but especially good is real "Parmesan" (in Italian: Parmigiano Reggiano) from Parma in Italy.

    Grana Padano and Fontina are also good...Fontina makes great grilled cheese sandwiches -- sure beats Kraft Singles.

    ColbyJack is the favorite...sandwiches, hamburgers, crackers...heck, just plain!

    Second to that is feta, together with any kind of melon or fruit...a little cuisine tip from some Turkish friends many years ago...
