When you did the stream processing, did you leave one audio stream selected ?

Tick only the streams you require. You should have only 1 video stream (normally preceded by [0xE0]), possibly a couple of audio streams and possibly a couple of subtitle streams. I suggest you choose 1 audio stream and any subtitles are up to you. If you choose any other audio stream apart from the one preceded by [0x80], make sure that you tick the Map to tick box and that 0x80 is selected in its dropdown box.
    Also:
I recommend leaving the audio as is - by default, this method will copy the AC3 audio to the AVI. You will need an AC3 decoder installed to play this back on your computer. If for some reason you wish to change the audio, go to the Audio menu and select Full Processing Mode. Go to Audio > Compression and select the audio codec you wish to use from the left side, then select the quality you wish to use on the right side.
Have you definitely done these steps word for word ? If you load your AVI into GSpot, does it list the file as having audio, and is so, what type ? (It might be an idea to post your GSpot screendump here )
    If in doubt, Google it.
