according to http://www.digitalfaq.com/capture/avivsmpeg.htm, I should use about 7mbps to 8mbps for full D1 resolution, but I need to squeeze about 2 hours of video onto 1 DVD-R, so that would not work out. What bitrate would you guys recommend for very little pixelation on video recorded at full D1? I'm using MainConcept to encode the video and using Sonic Foundry Soft Encode to get the ac3 (which will be encoded at 224 kbps).

    VBR.
5.5 avg, 8.0 max ... that is the "SP" 2-hour spec.

when I typed in 2 hours in https://www.videohelp.com/calc.htm it says the bitrate should be 4853kbps. how would the video be able to fit onto a DVD at 5.5mbps avg / 8mbps max if the max i could go to is 4.85mbps?

You are correct, Lordsmurfs figure probably came from the top of his head and is slightly out. Anyway, do as he suggested, i.e. use VBR encoding with 4800 as the average, 8000 max and chances are it will look fine.

The highest possible, with movie length (in time), DVD capacity and DVD bit rate specs as limiting factors. Use a bit rate calculator to find this value.
