i have few questions about adding sub into a dvd movie

i read the guide about adding a sub into a dvd movie
i want to ask few thing:
1]is the sub that i want to add will be showen automatically?
2]if i want to have the option to select the sub that i will add in the subs manu how do i do it?
3]after adding sub and adding the option to selcet the sub do i lose some qulity from the movie???
