you ONLY see a diff. when you re-encode DV ..

you are NOT using the panasonc codec when you capture (transfer) -- you are using canopus in your case...

if you use a canopus advc100 - you can't change what codec it is using as the compression is inside the canopus -- it is a digital transfer to your PC ..

only if you edit and re-encode the dv file would there be a difference ...

What BJ_M said and for differences in DV codecs, check the 'sticky' in the DV forum at the Doom9 site: http://forum.doom9.org/forumdisplay.php?s=e0164ca68cc1e977a0ac555af50965fa&forumid=59

that information is outdated a bit ..

the canopus codec mentioned there is not the same one used in the adc100
    for one thing ...

the main concept codec has been greatly changed since then ..

page 2 in that thread has some good info -- one is:
The chroma upsampling is an attempt to restore some of the lost chroma information that is inherent in DV capture from a DV SOURCE.

Why do you think all major networks have switched to 4:2:2 MPEG2 DVB Studio color on all of their sat feeds? They appreciate the increased chrominance information. The problem with the chroma upsampling comes in when you capture a 4:2:0 source as the chrominance information is already maxed out so to speak and you are then amplifying it again.
