    Hello,
YES YES and YES! 5.1 is the way to go. All you have to do is select the ac3 5.1 audio channel listed in the lower left panel of dvd shrink. It will rip it with the video, then when you burn it will play back in 5.1 (dolby or dts).

Use gspot to identify what your audio is in a video clip.

As yoda313 states yes it is possible to rip 5.1 channel audio.

DVD Shrink alreadys give the information on which audio track (Dolby 5.1 or DTS 5.1) the dvd contains, just check the box which audio you wish to keep.

All DVD Shrink does is compress the movie to fit on a dvdr to approx 4.37GB. the audio is untouched and is not compressed. therefore, you may find it useful that if the dvd contains both Dolby Digital and DTS audio (or maybe directors commentary), it is best to keep only one audio track, usually the Dolby audio as this is more compatible with dvd players and takes up less MB than DTS. The reason being that this will allow more room (in terms of MB) for the movie, only requiring a little compression and hence improved quality.

    Hope this helps!!
