Copying parts of multiple DVDs

I am trying to copy a couple episodes from severals DVDs of a TV show and author my own DVD with just my favorite episodes. What is the easiest way to take just a couple episodes from each DVD? Each episode is its own title on the DVD. What software should I use?

DVDShrink if you don't want menu's using ReAuthor

if you want menu's then use DVDShrink ReAuthor to select the bits you want from each DVD then use Tmpgenc DVD Author (guide HERE) or DVDLAB and create a simple menu to point to each part
