Sure! Just open more instances of the encoder and out them to work. But as each encoder likes to take 100% processor, there's nothing gained; One encoder getting all of the processor would finish twice as fast as two getting 50% each...

You could always batch encode which would encode one after the other automatically.

I agree with batch encoding, 1st of all because as Mats said they will share cpu usage, and second is that it will fragment the files so teribble, especially when encoding to DVD specs, i seen more than 100,000 fragments in 1 file when "multitasking" like that. I find CCE to be the easiest for batch encoding, and its a good thing that it can encode lotsa AVIs both to 1 mpeg file or to separate files or a mix.
