  1. I use DVD2SVCD to rip my DVD collection to stream from a central server. For most movies it works fine. However, I have a number of animated DVDs for my 4 year old that just don't look good once converted. I have tried many different settings but I'm obviously not hitting the right one. The symptoms are jumpy video during high action or fast movement scenes, almost to the point of being unwatchable. Can anyone help me on this?

Basically, I just rip the DVD and once complete, I use MPEG tools to multiplex the audio and video files back together. That way I have one single file for the movie instead of multiples which the program automatically creates. I'm sure there is probably a way to automate this but I haven't figured it out yet.

Not sure on your first question, I haven't used that program for a while. I seem to recall problems like you describe with anime, similar to cartoons. You might check the Doom 9 site for more info. I haven't tried this, but you could set CD size in the bitrate selector to DVD size and make just one file.
