  1. I just copied 2layer DVD to DVDR using DVDShrink, but I think I could further improve the video quality by compresiing the 1,2 GB large audio track (PCM) to MPEG layer II. The thing is, DVD Shrink doesn't have that option. Is there an easy way to do that?

    No easy (one click) way. You have to demux, then encode the audio to AC3 (and maybe shrink the m2v with ReJig or similar) and finally author. If you just want the main title, this is pretty easy, but if you want to keep the original DVD structure, it will not be trivial.
