Having already created files to DVD, and no longer having the source, how can I extract from a DVD back to MPEG?

Some authoring tools can import vobs directly such as TMPGENc DVD Author, DVD Lab, Ulead Moviefactory if you want to reauthor them.
If you want to edit the video you may be able import it direclty if you just copy the vobs and rename to .mpg. You can also use dvddecrypter and "rip"/demultiplex the mpeg video and audio to separate files that you can use. -
Thanks for the reply. I want to edit them. I'll try your suggestions. I do have DVD Decryptor, but haven't done much with it, and didn't realized I ended up with MPEGS after using it.
