Simple answer: Since the Proc Amp control that would allow you to increase saturation is deactivated, you can't change the saturation. Some capture devices do not provide user access to all the controls shown on the Proc Amp tab.

All you can do is complain to AverMedia about the problem and hope that they correct it, or get a different analog capture device that does have fully-functional proc amp controls.

And you can not run the Proc Amp control Myself manually?

No. There is no way to control the saturation manually. As things stand, only an experienced programmer who knows how to work with DirectShow might be able to write software to change the saturation manually (assuming the hardware allows it to be changed).

The picture you posted is from the DirectShow drivers' GUI for the Analog Capture Properties filter. If you are seeing the Properties window through capture software, all the capture software did was display the GUI for Analog Capture filter. The GUI is normally where ordinary users are allowed to exercise manual control over a device's Proc Amp settings, but the control you want is simply not available in the GUI.

I sent an email to AverMedia
Although I doubt that will fix it
    Thanks anyway for the comment
