You can rip the DVDs in whole to your hard drive with a ripper like DVDFab HD Decrypter or even DVD Decrypter most times. Then you can access them with a program like Power DVD or the freeware VLC Media Player. Both should be able to to play the subs.
Combining them all together is a bit more complex. You could extract them all to MPEGs with VOB2MBG.
Or to save quite a bit of space, you could convert them to Xvid or Divx with a program like AutoGK, then combine them all together or just use a player to select them. VLC Media Player works well with those formats also.
Probably a not of other methods also.

What i need is a video file with the subtitles embedded so they are on all the time. I dont think avi is a problem. Just havent had any luck getting it done thanks

You could hardcode the subtitles so they are permanently embbeded in the video file. Then when you load them up you don't need to select anything.
I am no expert on subtitles as I almost never fool around with them. Do a forum search on subtitles and you'll find procedures for how to do this. Note though with any conversion you will have some quality loss.Donatello - The Shredder? Michelangelo - Maybe all that hardware is for making coleslaw?
