How come when i try and backup a movie dvd useing something like dvdxcopy do i get a resulting 2 dvd's???
or is ther software that copies 1-1 dvd.

A commercial DVD (the one's you buy at a store) is on a DVD-9 disc. That means that is 'dual layered' so it holds twice as much data.
The DVD's you use to make a backup are DVD-5 which are 'single layered'. This means it only holds half the data that a commercial DVD does therefore if you want a perfect replica of the disc then it will be on 2 discs.
That said, some commercial DVD's (not many) come on DVD-5's meaning the backup will only be 1 disc.
