Now that I'm getting my legs to all this complicated stuff, here come the real questions.
PROBLEM: Despite looking great when played on the computer, the burned DVD-R stutters on playback on a machine known to play DVD-R's well. Note, the machine in question has only ever played DVD-5's that I've burned without additional alteration.
THE SYSTEM: G4 (1.25Ghz) Mirrored-front, Superdrive, 1gig RAM, a hummer.
SOFTWARE & PROCESS: decrypt w/ OSeX to .VOB, ffmpegx (mplayer decode, NTCS Film set, autocalc bitrate to 1 dvd-r all settings seem accurate) made the image with disc copy, burned with Toast, the original 5.7G DVD compressed into a 1.6G DVD-R (this seems a bit small to me).
OTHER THINGS I'VE TRIED: Minx, audio synch problems, 42, .iso image no where to be found (real bummer)
From what I've read, I'm doing things OK... any ideas?

What kind of Stand alone DVD player do you have?
I had the same problem, plays fine on the computer but jerky play back in my dvd player, it is because of the 3:2 pulldown flags that need to be added, there is lots is topics going on about it right now, check em out. try running your M2V file through PulldownX or telecine to add the flags you need.EarlyGrace -
