DVD to 2 DVDR

ok i am new at this. and this probably has been answered before.

1. I just rip the vob files from the dvd to my hd using smartripper. will this keep the dolby surround?

2. total filesize on hd after smartrip is 8 gig. now what program will i need to use to tell it to split it so i can burn to 2 dvd? I am using nero. i dont know if i can just drag the files directly into nero dvd-video form.
