  1. Just want to rip a single chapter from a DVD into a useable video format (MPEG/AVI) on my hard drive "at DVD quality". There are very fast screens, so encoding will degrade and blur things.

    I'm still new to this .

    Well, I'm new to this too but here's what i found out so far (about software that is) :

    "CladDvd xp 1.3" to rip the DVD (sorry, no single chapter's, havent come to that yet...)

    "DVDx" to encode (any) single chapters (Mpeg1/2, work's like a charm)

    The reason to use "CladDVD" for the ripping and not "DVDx" is because "CladDVD" will rip it directly to your harddisk instead of a constant use of your DVD-Rom like "DVDx" does. After the ripping you can select the file's from Harddisk with "DVDx" and select the seperate chapter's, maybe use some other ripper to just rip one chapter.......
