One gripe I'm having with this program is that I burn a dvd, and i have a "first play" clip, then a menu, then the dvd feature. The menu only stays up for about 5 seconds then the movie starts playing.
How do I make it so that the menu stays up until the user clicks on the play button or a chapter button?

If you look under the menu tab while authoring the menu, DVDWS defaults to a timeout of 20 secs. Just uncheck it. This will let the menu remain on the screen.
Another tip, make sure you rght click on each video you have inserted into the project. The Next Play option defines that after the video is done paying, it goes back to the last menu, or right to the next video.
These are the two things I ALWAYS forget to double-check. -
