I want to buy a DVR which is capable of recording HDMI and also Composite Video. Digital TV tuner would be preferred but not essential so long as I can capture from an external Digital TV tuner via HDMI. I then want to be able to transfer the video to a computer via USB or HDD.
I want to be able to capture VHS/Laserdisc, old consoles and TV.
Would a Hauppauge PVR be a good choice? Or should I go for a Sony/Panasonic/Pioneer DVR? Or a random Chinese brand? Any suggestions?

HD capture devices generally do a poor job with SD analog input. You should probably get an analog SD capture device for Laserdisc and an HDMI capture device.
CVBS/composite video is the preferred connection to use for capturing Laserdisc since analog composite video is stored on the discs and their S-Video output is notorious for poor quality. Ideally an SD capture device used for capturing the output from a Laserdisc player should have a good 3D comb filter to reduce dot-crawl noise in the video. The Hauppauge WinTV HVR 5525 is an internal TV tuner/analog capture device for the PC with a 3D comb filter for SD analog capture. It uses software to encode analog video so it is possible to do lossless capture. It also has a versatile digital tuner capable of receiving several types of DVB signals.
I need to know more about the HDMI resolutions that you want to capture. Many set-top boxes have an upper limit of 1080i. Some capture devices do a good job with that, and some do not. 1080p capture can also be a problem. Some devices that do a good job with 1080i capture cannot capture 1080p video or can only capture up to 1080p25.
[Edit]You aren't going to find a DVR made for the UK which is capable of recording from HDMI. You need a capture device for that, either one for the PC or a stand-alone capture device with one event timer or no event timers. In most cases you will also need an HDMI splitter strips HDCP as a side effect to record an HDCP-protected HDMI signal.
[Edit 2]Which old game consoles? Some may require specialized accessories and VGA capture devices. This card is highly respected by game capture enthusiasts.
