I wasn't getting many responces at D9 so I'm trying here.
This sample shows a really bad case of stairstepping:

really not much you can do once it's recorded. there used to be a filter that worked slightly in photoshop called noise ninja, but that's about all i can recall. it's a problem for still cameras with large sensors and only recording reduced resolution by combining pixels. it doesn't show up using video cams so i can't think of much work done to fix it in video editors.
if i had to depend on dslrs only for video i'd be putting these type filters in the cams. http://www.mosaicengineering.com/products/vaf/70d/main.html--
