How much performance would i see if i update my graphics card from a 256 8600GTS to a 768MB 8800GTX OC.

Performance with what? If you are into gaming you will probably see better or faster graphics. For everything else, you'll see the same picture on your monitor as you always have seen.
The graphics card only deals with displaying the image on your monitor, nothing else. Changing from an already fairly high spec card to an even higher spec card will succeed in making your wallet thinner, but it is unlikely you would notice any other difference. -
Though with that said even though its a relatively minor generation change the fact that the ram is so much higher will allow you to up the resolution and detail considerably. I'd say if you are trully into needing the absolute best for pc gaming then go ahead and do it if its within your budget.

Likely be unnoticable, unless you are one of the few people that play games at very high resolutions (over 1280x1024).
