For a DVD authoring program that lets you customize the menu, is decently fast, and has good quality. I'm sure everyone requests this.
So far I've tried TMPGEnc DVD Author and I put two episodes of Dexter on and it was going to take almost 4 hours. I also tried NeroVision first and that was also going to take forever.
WindAvi doesn't let you do menus from what I can see, and right now I'm using ConvertXToDVD and it's fast but I'm unsure of how good it'll look because I can't change the bitrate myself. It's encoding it at around 3600kb/s with three shows on one DVD.
Are these about the best ones to try or are there better choices? I'm sure if I only put 2 shows on each DVD the bitrate would be higher for CXTD but I'd rather try to get 3 on.

You aren't looking for authoring tools, you are looking for all-in-one converters that have menus. ConvertXtoDVD is probably the most reliable of the lot, but the menus are very basic. If you really want quality then you need to learn how to use the different tools required for each step of the process. Or accept the compromises that come with one-click-wonders.
There are some other, free alternatives you might try - DVD Flick and Favc.Read my blog here.
