    Is it possible to rip/keep the DVD menu along to let's say MKV or MP4?

    Well both mkv and mp4 support menus as well as Xvid and x264, so it is possible. For mkv you have DvdMenuXtractor. For mp4, I guess you would need to do things manually. The main problem is playback.
