I have a Sony TRV250E which is supposed to be a digital camcorder but still records to hi-8 tapes. Would the tapes be considered an analog or digital source? And/or would that depend on which cable (S-, USB, or Sony iLink) I use for the transfer.

Digital-8 and Hi-8 use the same size tape, AFAIK they are interchangeable even if the tape isn't labled for digital-8. If you look on the packaging of the tapes you should find the symbol for both. Regardless your cam records DV-AVI to tape, the same format all DV cams use.
To transfer use firewire (aka 1394, I-link), the USB is for transferring web quality video or stills from a memory card if it has that feature. S-video of course is analog.
