Encore 2 thumbnails

I am creating a DVD using Encore 2. I have created three seperate menus for chapters. I would like to use the chapters as thumbnails using their image and not the chapter that you get when you drag from the timeline to the menu. Also, i would like to use a audio track that would run uninterupted when you change from menu to menu. Any help would be appreciated as i am new to editing with Encore.
