  1. What software should I use to embed my own thumbnails in to my own AVI and mp4 video files?

I would like them to show up on either windows vista (WMP 11), PS3 or PSP.
For the thumbnails to show up on all 3 would be great, but I will settle for any one of them.

    Thanks

The thumbnails are not embedded in the video files, but generated by the system software (windows explorer etc). For help in getting this working google "video thumbnails not showing"

I'm not clear what you mean by 'thumbnails'. Those are generated by the OS and aren't within or part of a video, as mentioned by midders. If you mean a still shot in a DVD menu or with the video, that's different.

Windows thumbs are probably restricted to files that WMP can play natively. What is different between the videos that show thumbs, and the ones you create ? Use MediaInfo to see the interals of the files. My guess is that it is a codec issue.
